Where Hospitality Meets Creativity: Behind the Bar at City Food Hall
With over 30 years in hospitality, my vision and approach have never changed — treat every guest like family. Hospitality is more than serving food and drinks; it’s about creating an experience people remember. It’s about going above and beyond in every possible way to ensure guests leave happy, feel welcomed, and most importantly, want to come back.
That mindset has inspired the way I approach cocktails behind the bar. I’ve always believed a great cocktail should tell a story, spark conversation, and deliver something unexpected. I wanted to give our guests the experience of a cocktail reimagined — familiar flavors and classic inspirations with a fresh twist that keeps people curious and excited for what’s next.
Take the Peach Me, for example. If you came in craving a margarita, this is the one. Peach and guava come together with a subtle poblano spice, creating the perfect balance of sweet heat and refreshing flavor. It’s playful, bold, and memorable all at once.
Then there’s the Ciao Sour — inspired by the feeling of sitting in Italy enjoying a beautifully crafted whisky sour. Smooth, balanced, and elevated, it brings a touch of European inspiration to a timeless classic.
And of course, Not Your Catalina Wine Mixer. This cocktail pays tribute to an old frozen favorite from Catalina Island, California, known as Buffalo Milk. We took that nostalgic classic and gave it new life with our own creative spin, turning it into something both familiar and completely unique.
These are just a few examples of the “classics with a twist” that continue to inspire me every day. Creativity in hospitality never stops evolving, and neither should the guest experience. Thinking outside the box allows us to keep surprising our guests, creating memorable moments, and giving people a reason to return — not just for a drink, but for the feeling they get when they walk through the door.
At City Food Hall, we continue to work collaboratively to build a strong team culture. With Standard Operating Procedures and our Brand Bible in place behind the bar, the team has quick access to the tools, recipes, and knowledge they need to succeed. Whether it’s learning a cocktail recipe or understanding the story behind a new supplier, sharing that knowledge helps our team connect with guests on a deeper level and create a more engaging experience.
Not a day goes by without the team walking the property, brainstorming ways to improve and lending creativity to make CFH a destination guests will recommend to their friends and family. The indoor bar has been reorganized and refreshed to create a cleaner, more functional operational flow, while our outdoor bar is now officially open. We intentionally waited for the season to heat up before unveiling the outdoor experience, giving guests a space to enjoy music, move freely, and gather comfortably with friends and family.
Upstairs, our Gallery space has already become a hit for events and promotions, and we’re excited to continue building momentum as we prepare to open the additional upstairs section soon.
As we continue to grow, we remain committed to making thoughtful, intentional decisions — never rushed, always focused on creating the best possible experience for our guests and our team.
